This variety of Bergamot essence is something unique, as well as being a one-of-a-kind product, since the best quality comes from the Calabria region in Southern Italy, in this case the essence is pressed with a simple and rather “primitive”, that is, sponging.
Unlike the normal squeezing of the peels using machinery, which is often very expensive, sponging requires only the knowledge and patience of the craftsman.
The fruit is divided in half, the pulp is removed and the peel is placed on the sponge and with a masterful gesture the peel is turned over, causing the essence to splash out.
The technique does not cause any heating and therefore does not alter its aroma, resulting in a more rounded and fruity scent.
